1. Amazing Apple Crisp


  • Dried apple rings
  • Flour
  • Baking powder and soda
  • Cinnamon
  • White and brown sugar
  • Salt
  • Butter
  • Oatmeal

Directions: Preheat the oven to 350 degrees F. Grease a dish for the crisp. Cut the apple rings in half and coat with a half-cup of white sugar, 2 TBSP flour and 1 TSP cinnamon. Place them in the greased dish. For the topping, mix together 2 cups apiece of flour and oatmeal, 2 TSP salt, another TSP cinnamon, half a TSP apiece of the soda and powder, 1.5 cups of butter and 1.5 of cups brown sugar.

Pour the topping over the apples, and place the dish in the preheated oven. Remove after 35 minutes and let cool for 5 minutes. Serve topped with French vanilla ice cream.

2. Pumpkin Spice Muffins With Pepitas


  • Canned or fresh pumpkin, cooked and pureed
  • Eggs
  • Pumpkin pie spice
  • Orange juice
  • Vegetable oil
  • Flour
  • Baking soda
  • Sugar
  • Salt
  • Pepitas

Directions: Preheat the oven to 350 degrees F, and add muffin liners to your muffin tins. This recipe makes about 30 muffins.

Mix the pumpkin pie spice, 3 cups of flour, 1.5 TSP salt and 2 TSP baking soda in a bowl and set aside. In the bowl of a mixer, add four eggs, 3 cups of sugar, the canned or fresh pumpkin, a half cup of vegetable oil and 3/4 cup of orange juice. Blend well. Keeping the mixer going, slowly add the dry ingredients to the wet ones, until they are just blended. Scoop into the muffin tins. On top of each one, sprinkle 4 or 5 pepitas.

Cook for up to 30 minutes, checking on the muffins at 25 minutes to ensure they haven't burned. Enjoy with a steaming mug of tea on a brisk afternoon.

3. Super Simple Pecan Pie


  • Pecan halves
  • Corn syrup
  • Brown sugar
  • Butter
  • Eggs
  • Salt
  • Ready-made pie crust

Directions: Preheat the oven to 375 degrees F. Add 3/4 cup corn syrup, a cup of brown sugar, four eggs, half a TSP of salt and a third of a cup of butter into the bowl of stand mixer and blend until combined. Add the pecans and mix again for a minute. Pour the mixture into the pie crust and place on a cookie sheet. Put it in the oven and bake for 15 minutes. Remove from the oven and cover the pie crust in foil to guard against burning. Return to the oven for another half hour.

Remove and let cool for 30 minutes, then put it in the refrigerator for a few hours. Serve with whipped cream.
